roasted chicken w. green beans tumeric rice 

tonight I made my first ever Arabic dinner! 🙂 I don’t mean to brag, but…okay yes I do, it was DEEELISH! super easy to make!

what you’ll need:

yields 5-6 servings

chicken:

4-5 chicken thighs (I use thighs because they’re my favorite and juicy lol if you want to be healthier you can do boneless skinless)

Salt, pepper, cayenne (I like spicy) to taste

rice:

3 cups of brown rice

5 cups of water

20 whole cardamom pods (pictured below)

1 medium yellow onion chopped

2 green chile peppers (optional)

2 cloves of garlic (finely chopped)

1 bag of frozen green beans

2 tsp tumeric

directions:

-season chicken with salt, pepper, and cayenne pepper in olive oil (this should take about 30ish minutes…use your best judgement, PLEASE don’t get salmonella!)

-coat the bottom of a large pot with olive oil & cook onion until transparent (this takes around 3-4 minutes). add green chile peppers, garlic, green beans, water, tumeric, cardamom, and rice.

-cover and let cook. (This will take about 30-35 minutes)

[side note : i didn’t actually measure the rice before putting it in the pot, so while it was cooking I had to keep adding a cup at a time to be sure the rice was tender…don’t judge me I’m not a professional, yet. 🙂 ]

I also made a fresh little side salad of:

cucufullsizerendermbers, tomatoes, and red onions. I mixed them with white vinegar & seasoned with salt and pepper.
